Quinoa Bites with Yogurt Dijon Dip


I am a big quinoa fan! I just love this healthy grain. It is packed with protein, lots of fiber and it is low on carbs. Even my boyfriend loves it....surprise, it is super yummie and healthy. 

Now, look at these quinoa bites! They look awesome and taste delish and they are a welcome change from simple quinoa salads or just quinoa as a side dish. 



Ingredients (12 servings)

95 cal per serving without dip



Quinoa Bites

200 grams uncooked quinoa (I used 100 grams black and 100 grams white quinoa)
2 eggs
1 chopped onion
125 grams mozzarella cheese
1 minced garlic clove
6 cherry tomatoes

1/4 bell pepper

dried herbs of choice


250 grams yoghurt
2 tsp dijon mustard 
dried herbs of choice (I like to use oregano and parsley)


1. Wash quinoa, put it in a pot and cover it with water (1 cup quinoa & 2 1/2 cups water. Bring to boil and stir until quinoa is tender. 
2. Preheat oven to 180 degrees celsius. 
3. Shred mozzarella, bell pepper and tomatoes. Then mix together all ingredients for the quinoa bites. 
4. Put 2 tbs of the mixture into a muffin tin. It should be 12 servings = 12 muffins.
5. Bake for 15 to 20 minutes. Cool a bit before removing quinoa bites from the pan. 
6. Combine yogurt and mustard and season it with salt, pepper and herbs.
