Oven Baked Veggies



Earlier today I saw a video on youtube of Freelee the Banana Girl in which she was making vegetable soup and oven roasted vegetables. Yumyum! 

Have you ever heard of Freelee? She is a banana addict (I think she eats 30 bananas a day), she lives a high carb raw vegan lifestyle and she eats lots of fruits...2000 calories of her daily calories come from fruits. I don't know how she does it - eating so much fructose and still being so skinny.
 

Anyway, the food looked fresh and tasty and I had so many vegetables left in my fridge - zucchini, sweet red pepper, eggplant, sweet potato, mushrooms, tomatoes. 

Perfect! Oven baked veggies for dinner! 




Ingredients

zucchini
bell pepper
eggplant
mushrooms
sweet potatoes
tomatoes
salt & pepper
olive oil
dried herbs of choice

you can also add potatoes, olives, onions, parsnips, squash, garlic,..






Directions


1. Preheat oven to 200 degrees celcius.
2. Cut veggies in pieces (2x2cm).
3. Put vegetables in a big bowl, add olive oil, salt, pepper and herbs and mix. 
4. Put all veggies on a baking tray and bake for 10 minutes. 
5. After 10 minutes turn veggies and bake again for another 5-8 minutes. 
VoilĂ !

  1. Why does a high fructose consumption hinder being skinny? An intake of 2000 kcals for an active, grown woman is rather on the low site, regardless whether she consumes it in baguettes or apples. So I would attribute her super slim figure to her low intake.

    1. She eats a lot more than 2000 calories a day but 2000 calories come from fruits.

  3. Thank you for this Oven Baked Vegetables! They looked delicious and healthy. I just finished the 3 Day Military Diet and I’m looking for some more low carb dishes to try. Do you have the number of calories for this recipe? I’m counting calories and doing portion control ever since I was done with the diet in which I lost 6 pounds. I’m in a hurry to lose the extra weight in time for my cousin’s wedding 3 weeks from now. I plan to do the Military Diet again to shed some more pounds. Do you still have other low carb recipes I can try?
