Vegan Matcha Green Tea Pancakes



As I said, I am addicted to matcha! 

Matcha everrrrry day...oh yum!


Today I made matcha green tea pancakes. 
I don't make pancakes often that is why they don't look perfect, but they were so delicious! 


Recipe
(9-10 pancakes for 2 persons)

pancake batter
  • 50 g coconut flour
  • 1 tsp matcha for cooking by Aiya 
  • 150 ml almond milk or any other non-dairy milk
  • 2 bananas
  • 1 tsp baking powder
  • coconut oil


topping
  • 125 ml vanilla soy drink
  • 100 g pineapple
  • hibiscus powder or any other pink powder (maybe acaí?)
  • cashews
  • pomegranate seeds 





Directions

1. In a bowl mix together coconut flour, baking powder, matcha and almond milk. Mash 1 banana, cut the other banana into slices. 


2. Add mashed banana to the batter and mix until you obtain a homogeneous mixture. 




3. Melt coconut oil in a frying pan. Ladle 1 1/2 tbsps of the batter onto the pan....I made 2 pancakes at one time. Bake pancakes 2-3 minutes on each side until golden. Repeat with the remaining batter and add more coconut oil if needed.

4. At the same time, prepare the sauce: heat vanilla soy milk in a sauce pan (do not bring to the boil!). Add hibiscus powder. Cut 100 grams pineapple into small pieces, add it to the milk too and stir occasionally. 

5. Transfer pancakes to two platters and stack them like this: pancake - banana slices - sauce - pancake - banana...and so on. Drizzle remaining sauce and spread pomegranate seeds and cashews on top.
