Yummy Cashew Cheese



When I became vegan I thought it was hard to live without cheese. But no, not really. Because, well, there is cashew cheese. So if you are vegan and craving cheese, then this is for you! Vegan dreams come true! 


CASHEW CHEESE RECIPE


I made the cheese a couple of times the last weeks. Pizza, lasagna, nachos con queso, grilled cheese sandwich,...cheese heaven is finally here.

Look at this cauliflower crust pizza with cashew cheese. Perfection, right?




You'll need

1 cup cashews
2 cups hot water
2 tablespoons tapioca starch 
2 tablespoons nutritional yeast 
1 tablespoon lemon juice
1 level teaspoon salt
crushed pepper 



Creamy Cheesy Mushrooms


Directions

1. Soak the cashews overnight.
2. Add cashews, water, tapioca starch, lemon juice and nutritional yeast to a high speed blender. Blend until smooth.
3. Pour mix into a small sauce pan and heat over medium high heat. 
4. Season with salt and crushed pepper. 
5. And then stir! It's so important that you keep stiring so that it doesn't form clups. After 5-8 minutes you'll get the gooey texture we want. It's to die for. I swear. 

Store in an air tight container in the fridge. If you want to use it (again), reheat it, stir and voilĂ !
