Cheesy Pizza Bites

Hey my lovelies!

Does this picture makes you drooling? Yes? hahha sorry ;)

I made these delicious vegan cheesy pizza bites a while ago and totally forgot to post the recipe.

It is definitely the perfect party food. And good thing is you can serve them warm and cold!

Here's what you need

2 packs of ready-made tarte flambée pastry (or puff pastry)
1 batch of my cashew cheese
6 large tomatoes, diced
a bunch fresh basil
juice of 1 lime
2 tablespoons of olive oil
salt
pepper
dried oregano

1. Preheat oven to 200 degrees Celsius.
2. Cut pastry into 3 stripes and each stripe into 5 squares, so a total of 30.
3. Mix all ingredients except the oregano in a large bowl and season with salt and pepper.
4. Heap 1 tablespoon of the mix on the pastry square. Fold pastry over filling and press corners together to meet in the center.
5. Sprinkle with oregano.
6. Bake until pastry is golden brown. I think my pizza bites were in the oven for 15 minutes.

The corners of most of my pizza squares didn't hold together while baking, so don't worry if that happens to you too - it still tastes amazing :)

Oh I just thought of using muffin cups next time...mmhh I will try that next week! Stay tuned an see all my colorful creations on instagram first! Follow me: theblondebird

  4. Thanks for this awesome recipe! I'm now eating right and still looking for low carb food. I've learned a lot from my 3 Day Military diet experience where I lost a lot of extra weight. I realized that I am consuming a great amount of food without realizing it. Thanks to the diet, I learned about portion control and counting calories to make me lose weight. I also shunned sugary sweets now and drink lots of water instead of cola.
