The Most Delicious Curry Bowl



I made a curry buddha bowl for my vegan pop up cafĂ© last October. I am a big fan of buddha bowls, and especially curry buddha bowls. And so I had to put it on the menu, of course. You know, it is not easy to show non-vegans how delicious vegan food is.... so many people who heard of my pop-up cafe/restaurant were like ahhh no I don't eat vegan food! Vegan? What?! Uhm yeaaaa right guys, whatever. Birdies, you know what?! The curry buddha bowl was the hit! I served it with rice, mushrooms, avocado, spring onion, pak choi, smoked tofu, pea pods, soybean sprouts and fresh cilantro. 



And now while I am writing this, I get hungrrrry! Pretty sure I will make a curry buddha bowl this evening. It fits perfectly into my diet since I am experimenting with Raw Til 4 and Dr. Grahams 801010. Have you ever heard of 80/10/10? It's a raw food diet, mostly fruits and veggies. I think my body needs cooked food too, so I'll add rice, sweet potato and soups. Raw Til 4 sounds like a plan then. Sooooo yummy healthy & low in calories. 

Here is the recipe my dears..




You need

2 onions (200 gr)
2 large carrots
2 cm piece of ginger
1 garlic clove
1 tbsp curry powder
100 gr curry paste
1/2 tsp curcuma
5 tbsp soy sauce
500 ml coconut milk
200 ml mango juice
200 ml water
olive oil
cilantro
lots of veggies of choice 
rice


Directions

1. Cook the rice as directed on package. 

2. Peel onions & cut them in bigger pieces. Peel carrots & cut them in small pieces. Cut garlic in thin slices. Heat a sauce pan, add olive oil, then garlic, onions, carrots and fry. 

3. Chop ginger in very small pieces. Add them to the sauce pan. 

4. Then add curry paste (I use this one), curcuma and curry powder and stir! It's important to stir a lot...because who wants a burnt taste? 

5. Deglaze with soy sauce. Then pour in coconut milk, mango juice and water. If you like add 1/2 chili. Bring to a boil & cook for 15 minutes. 

6. Prepare fresh veggies of choice. I LOVE sliced mushrooms, diced smoked tofu, chopped pea pods, sliced spring onion, pak choi,... and of course, a lot of cilantro! Put veggies in a bowl, pour curry on top and serve with rice. VoilĂ !
