Green Gazpacho





I was teaching my very first cooking class last week.

"Healthy snacks and drinks for hot summer days."



I created lots of new recipes including a recipe for green gazpacho. I tried gazpacho (the normal version) in Spain, in that Spanish restaurant in Vienna and also made gazpacho at home. Unfortunately I was never like whoaaa I want more of that!!! When the cooking event came closer I decided to give it another try. Yes! I am going to cook green gazpacho with my clients! K, I like green smoothies and I make some real good green smoothies.... so obviously green gazpacho must work, right!? LOL

I used avocado and plant-based sour cream for the creaminess and a whole green chili to make it fuego. I love the spicy twist!

Green Gazpacho
Amazing for hot summer days!
Ingredients
  • 500 g cucumber
  • 100 g baby spinach
  • 1 avocado
  • 2 spring onions
  • 1 green chili
  • 2 garlic cloves
  • 20 g basil
  • 20 g parsley
  • 2 tbsp olive oil
  • 1 tbsp sherry vinegar
  • 200 g plant-based sour cream
  • 1/2 tsp salt
  • juice of half a lime
Instructions
1. Cut cucumber lengthwise, remove seeds and cut into pieces. 2. Cut avocado in half, remove pit and scoop out the avo flesh.3. Peel garlic. Remove the stem and outer layer of the spring onions. 4. Add all ingredients to a blender and mix until smooth! Add enough water to get a thick soupy consistency. 5. Garnish with chopped parsley and spring onions.
