And I love to bake birthday cakes for my friends.
Since my friend whose birthday was coming up is vegan too, I made a vegan blueberry cake in a jar. And it was the first time ever I baked vegan (pancakes don't count) !
I tried the dough before baking, it tasted amazing. Whoop whoop. The only thing that could go wrong now was that it was getting too dry and stiff.
And I couldn't resist licking off the bowl with melted dark chocolate (heaven!)
As you birdies know, eating out of jars is my obsession and my breakfast jar company is my little baby - so is there a better idea than baking cakes in a jar? uhm. no.
Let me share this recipe so you don't drool all over your keyboard haha.
You need
(for one 500ml jar)
dough
80 grams flour
50 grams brown sugar
1/2 tsp baking powder
10 grams coconut crunch
5 grams maca powder
40 ml melted coconut oil
10 grams sliced almonds
50 grams blueberries
almond milk
decoration
10 grams blueberries
white almond butter
30 grams dark chocolate
coconut chips
Directions
1. Preheat oven to 180 degrees Celsius.
2. Mix all ingredients for the dough and use as much
almond milk as needed to make it smooth.
3. Pour dough into the jar and put it into the oven for 25-30 minutes.
4. Let cake cool down a bit.
5. Melt chocolate using a water bath and make sure that
the water is not boiling to avoid that water gets
into contact with the cocolate. (this will ruin it!)
6. Pour melted chocolate onto the cake and put
blueberries on top.
7. Sprinkle coconut chips on top and don't forget the almond butter drizzle!
