My apartment turned into a vegan Christmas cookie bakery last weekend. I baked cut-out cookies, cinnamon stars and vanilla crescents. Unfortunately I forgot the time for a couple of minutes and the second batch of my favorites - vanilla crescents - totally burned. Yeah. I was pissed. Anyway, I think it was my first time ever making cinnamon stars/Zimtsterne. And they turned out amazing! Zimtsterne are an Austrian/German classic...Christmas markets, cinnamon stars & mulled wine. Ohh Christmas time wouldn't be the same without them. The cookies are made without any butter/oil and they are gluten free, too.

Cinnamon Stars
This is a gluten free recipe :)
Ingredients

For the batter:
- 100 grams hazelnuts, grated
- 100 grams almonds, grated
- 100 grams icing sugar
- 2 tsp cinnamon
- 1/2 tsp cardamom
- 40 grams water
- 70 grams icing sugar
- 1-2 tsp coconut milk or water
- 1/2 tsp cinnamon
For the icing:
Instructions
1. In a bowl mix together all the ingredients for the batter. First add only a bit of water...maybe you don't even need all of it! If you like mix by hand, but it's gonna be a sticky affair! 2. Chill the dough for about 30 minutes. Preheat oven to 160 degrees C. 3. Roll the dough and cut out stars. 4. Bake for about 7 minutes. Then let cookies cool down. 5. Mix together icing sugar, cinnamon and 1 tsp coconut milk or water until creamy. Add 1 teaspoon more coconut milk/water if needed. Decorate star cookies and voilà!

Zimtsterne

Zutaten
- Teig:
- 100 g geriebene Haselnüsse
- 100 g geriebene Mandeln
- 100 g Puderzucker
- 2 TL Zimt
- 1/2 TL Kardamom
- 40 g Wasser
- 70 g Puderzucker
- 1-2 TL Kokosmilch oder Wasser
- 1/2 TL Zimt
Zimt-Deko:
Zubereitung
1. Alle Zutaten für den Teig in einer Schüssel zu einem Teig kneten. Anfangs nur ein bisschen Wasser hinzugeben - vielleicht benötigst du nicht die ganze Menge. Ich hab den Teig mit den Händen geknetet. Achtung! Klebrige Angelegenheit ;)! 2. Fertigen Teig 30 Minuten kühl stellen. Danach den Ofen auf 160 Grad vorheizen. 3. Teig (falls nötig zwischen 2 Lagen Backpapier) ausrollen und Sterne ausstechen.4. Sterne 7 Minuten backen. 5. Für die Deko Staubzucker, Zimt und 1-2 EL Kokosmilch/Wasser verrühren bis die Masse cremig ist. Sterne mit dem Zimt-Zuckerguss dekorieren und voilà!
