Creamy Avocado Pasta Sauce

Spaghetti-Saturday is a family tradition. Almost every Saturday we eat pasta. And every Saturday morning I am excited about it ;) I mostly make pasta aglio e olio, with pesto, or simply tomato sauce. Only recently I made this amazingly creamy avocado sauce and I still can't believe how tasty it was! When I put a photo of my pasta lunch in my instagram stories I got so many messages from you asking for the recipe. I used a special pasta which I bought in Italy last month: fusilli bucati corti by Barilla. It looks like fusilli, but it is so much better than normal fusilli!

Creamy Avocado Pasta Sauce
Ingredients (for two)

- 2 avocados
- 4 slices almond cheese (by SimplyV)
- 2 tbs extra virgin olive oil
- 2 tbs nutritional yeast
- 2 tbs lime juice
- fresh oregano and basil
- salt and pepper
- 160 g pasta (raw)


1. Cook pasta as said on the package.2. In the meantime mash avocado with a fork until smooth and creamy.3. Melt almond cheese and mix it with the avocado mash.4. Add olive oil, nutritional yeast and lime juice. Then season with salt and pepper. Fresh crushed pepper is the best!5. Strain cooked pasta and mix with avocado sauce. Decorate with oregano and basil and serve immediately!Voilà!!
